What's Einkorn?!
Has anyone ever heard of Einkorn wheat before? Check this out....it's pretty fascinating!
Einkorn wheat is the world's most ancient, unchanged wheat dating back more the 10 thousand years ago. It was originally hybridized with other grasses to make Farro, (emmer wheat) which has 28 chromosomes, and then since cross bread a few times more into modern wheat which has 42 chromosomes....yikes! Why was this done? It was done to create higher yields of wheat for higher profit.
Beginning in the late 90's, non-organic wheat crops began being treated with chemical glyphosate (RoundUp) just before harvest with the result that most of the non-organic wheat in the United States is now contaminated with it. Dr. Stephanie Seneff, a Nutritionist who studied this issue in depth, explains that when you expose wheat to a toxic chemical like glyphosate, it actually releases more seeds resulting in a slightly greater yield. So our health has once again been put at risk to result in higher profits. Who's to thank for this? The USDA. The government operated department we are supposed to entrust to make the right decisions for what we are allowed to consume.
According to the US Department of Agriculture, as of 2012, 99% of durum wheat, 97% of spring wheat, and 61% of winter wheat has been treated with herbicides. This is an increase from 88% for durum wheat, 91% for spring wheat and 47% for winter wheat since 1998. Can you guess when Celiac disease and the vast majority of leaky gut including an onslaught of digestive issues, allergies, plus nationwide weight gain was on the rise? You guessed it....the late 90's!
Untouched Einkorn wheat has only 14 chromosomes to it's genetic make-up. Less chromosomes = Easier digestion.
Less genetic modification of our food = our bodies being able to recognize it so it doesn't result in some of the following issues: -frequent colds and illness -rashes -allergies -weight gain -bloating -IBS (irritable bowel syndrome) -constipation -stabbing stomach pains -immune disorders -chronic fatigue -brain fog
When there is damage done to the gut, it causes inflammation. When there is chronic inflammation, it leads to disease. 90% of all disease begins in the gut. Yes, that's absolutely FACT.
Happy gut = Healthy body!
This means that Einkorn wheat doesn't typically bother people who have issues with gluten. Even though all wheat has two main proteins: gluten and gliadin, Eikorn wheat still has low levels of gluten and gliadin, therefore having a balance for the body to be able to digest. In Einkorn wheat, these proteins haven't been adulterated, sprayed with cancer causing chemicals, or been hybridized in laboratories.
So it's clear that when our food has been unnaturally changed, our bodies have a really hard time adapting. Mess with nature....and it will revolt!
And if we need even more reasons to use only Einkorn wheat from now on..... -It's 40% higher in protein - hello Moms making mac n' cheese for their kids and worrying they don't eat enough protein! -it has 4 times the beta carotene -it has 4 times more lutine and riboflavin
And low and behold who grows, harvests and produces highest quality Einkorn wheat flour, spaghetti, rottini pasta, pancake and waffle mix, and now even Einkorn granola, but Young Living! My appreciation for their concern to my families health, and the health of our environment goes to Gary Young, founder of Young Living. He is a farmer and takes pride in owning private farmland that will never be touched with glyphosate, and the Einkorn wheat will never be cross pollinated, EVER!
The granola is out of this world. As you can see I couldn't even take this photo without MJ's hand in the way. The pastas are out-of-this-world delicious. I have yet to try the pancake and waffle mix.....but I can only imagine how yummy that could be in a muffin recipe too.
